I have adaptive this recipe from a cake recipe I got a few years ago. You can make these little muffins and have them as a grab and go breakfast. Be careful they are delicious!
1 ½ cups all purpose flour ½ cups sugar 2-3 smashed ripe banana 8 ounce can of crushed pineapple with juice ¾ cup unsweetened applesauce 2 eggs ½ tsp baking soda 1 tsp cinnamon 1 tsp vanilla ½ tsp salt Dash of nutmeg Non-stick cooking spray Preheat oven to 350° F Mix all ingredients. Prepare your mini muffin pan Put a full spoonful of batter into each muffin cup.
You will need to spray the pan after each batch. Bake for 25 minutes
Makes 50-60 muffins
